Bread


6 cups of white flour
1/2 cup of flax seeds grounded
2 tbs of yeast
1.5 tbs of salt
Warm water about 3 cups to a sticky dough
Herbs/Olives etc.,
Nigella Seeds, Coarse Salt for topping
Flour for dusting

Add above with whatever herbs you fancy at the time. 
Leave to rest about 3 hours.
Shape and place on floured tray.
Rest a further 40 mins atleast.  Don't worry if it doesn't rise much this time, much of the rising will happen during baking.

Heat oven to 275oC
Empty tray on bottom for steaming.  
When oven is hot slide bread in.  I don't have a pizza stone, so I warm my tray, take it out and slip the bread dough on.  
Throw water in bottom tray, close immediately - steam makes the crust crunchy.
Dust a little flour on top for that 'artisan bread' look.
