Stuffed mushrooms

 Stuffed mushrooms

Chopped stubs;
cream cheese;

Served with pickled lemons and red peppers

Mix top ingredients - whiz in mixer, first, walnuts, set a aside, onions and garlic, set aside, whiz mushrooms.  Mix all together with cheeze.  (optional Parmesan more other...)

Fill mushroom, top with panko breadcrums.
GRILL on mid shelf till crispy done.
Must eat immediately while still hot

Marinate in yoghurt; tumeric; salt; paprika; cumin;

grind corriander, cloves, cardamon together.  Add cinmon stick and anise do not grind.

Heat in mutton oil sliced onions till soft.
Place aside.  Continuing frying the cinnimon stick and anise.  Add the ground spices.
Layer sliced aubergines in dish.  Then the marinaded meat.  Onions and pour fried spices over.

Bake in low-  our oven 200 everyone else's 180'c for about 4 hours.

Serve with white rice

Mutton: roast

Marinate in garlic, ginger, rosemary over night
Brown fat till crispy.
Souround with chopped vegetable ie carrots; onions; head of garlic; celery; potatoes etc
pour some liquid.
Cover and bake for 4 hours ( 750g) in low our 200'c is everyone's 180'c
Take out slice thinly.

Camping/Scrounging/Emergency Work lunch

Frozen corn in Office freezer Rules OK!

With that as a base, my trusty couscous, and tuna tin always in the drawer.
Boiled egg and veggie salad mixed in. Delicious!

I always have in the office bag of essentials:
soy sauce
sea salt
chili flakes
sesame oil
black sesame, white sesame
olive oil
Ramen dried noodles

In the office freezer right now: I keep small amounts of:
misu flavouring
sweet corn (in season)
frozen lasagna (new addition) re-heated lasagna with fresh side salad is great!
Parmesan cheese

The seafood should be 'cooked' by soaking in hot water only till done.  Otherwise they can be easily over cooked and rubbery.

Baked Potato and veggies

Potato pierced and microwaved from raw. (Takes ages - work micro wave about 15 mins depending on size)

Always have frozen post-cooked sweet corn.  NOT in microwave as is.  I like to immerse it in a tall cup with hot water from frozen.  Change water a few times and finally heat in micro wave still immersed in water for a final steaming hot, buttery cob.

Same with raw broccoli, immerse in hot water and micro wave ABIT  - still crunchy.

All smothered with butter, sea salt, and fresh black pepper.

These were deep fried, will try in oven next time.
There's only so much deep fried  allowable in this life time ;)

But these were unbelievably  good, dipped in ketchup, or satay peanut  (peanut sauce recipe) sauce kids loved it!!

I used alot of mince meat here, but didn't really taste any meat, so next time will just stick to ALOT of mint, cilantro, some onions and rice.  No need for meat  me thinks
